Chocolate Chip Honey Cookies


1/2 cup coconut oil
1/2 cup honey
2 tsp vanilla
1 egg
1 cup all purpose flour
1 cup oats
1 tsp baking soda
1/2 tsp salt
2 cups chocolate chips

Preheat oven to 375 F. Line baking sheet with parchment paper. Whisk coconut oil, honey, vanilla and egg in a large bowl. In a separate bowl mix flour, oats, baking soda, and salt . Add the dry ingredients to the wet ingredients and mix with a spoon, then mix in the chocolate chips. 

Scoop 1 tablespoon of the dough into balls onto the prepared cookie sheet, leaving two inches between each cookie. Bake for 10 minutes until golden brown around the edges.

    These look delicious. I like how you substituted honey for refined sugar. Definitely going to try these. How is the consistency of the cookie?
