Moringa Cookie Sandwiches

Hi guys!

Try out my moringa cookie sandwiches. They taste great and have many health benefits to power you through the day.

Moringa Cookie Sandwich

1 cup walnuts
3 tbsp honey
3 tbsp oats
1 tsp vanilla extract
1/2 tsp moringa powder

Blend all ingredients in a food processor until it forms a ball. Freeze the dough for a half hour. Once the dough is hard, preheat oven to 350 F. On a lightly floured surface, roll the dough out until it is 1/4 cm thick. Cut circles with a circle cookie cutter or the top of a glass. Line a baking sheet with parchment paper and bake the cookies until slightly golden brown. 


1 cup confectioner sugar
1 cup non-dairy milk 
1 tsp vanilla
1/2 cup coconut flour

Blend all ingredients in a food processor. 

Once the cookies are cool, put 1 tbsp of the filling in between two cookies to make a sandwich! Enjoy!

    The cookie itself sounds delicious and healthy. Since I am a vegan cutting back on sugar, I would skip the filling. A moringa cookie is a fantastic idea.
