Zoodles with Roasted Tomatoes


Simply, healthy recipe for a quick dinner!

Zoodles with Roasted Tomatoes

4 zucchini
2 tomatoes
2 tbsp + 2 tbsp olive oil
2 tbsp garlic
1/2 cup parmesan

Preheat oven to 350 F. Slice the tomatoes thinly and place them on a baking sheet. Drizzle 2 tbsp olive oil and sprinkle with salt. Mix around with your hands to make sure they are evenly coated. Bake for about 30 minutes. 

while they are in the oven, zoodle the zucchini. Add 2 tbsp olive oil to a pan with the zucchini, salt and garlic. Cook on medium heat until the zucchini is evenly cooked and soft. Add the parmesan cheese to taste. Enjoy!
