Veggie tacos

Last night I got my boyfriend to willingly eat tofu! I never thought the day would come, but he loved it and even went for seconds. However, he did go to McDonald’s in the middle of the night and ate something ridiculously unhealthy. He always waits until I’m sleeping to run out of the house and get fast food… But I am proud of him for trying to eat healthy some of the time.

For the tacos, we roasted vegetables that we had in the house, as well as, tofu and added fresh salsa!

Baked Tofu 

1 block of extra-firm tofu
1 tbsp olive oil
1 tbsp habanero  seasoning
3 tsp garlic powder

Preheat oven to 350 F and lightly oil a baking sheet. 

To prepare the tofu: drain the tofu and use your palms to gently squeeze some of the water out. slice into 1/2 inch cubes. Line a cutting board with paper towels, then arrange the tofu in an even layer on the towels. Fold the towel over the tofu and press gently to squeeze some of the extra water out. Transfer the tofu to a medium mixing bowl and drizzle with olive oil. Add the garlic powder and habanero seasoning. Mix with your hands to evenly coat the tofu with the seasoning. 

Add the tofu to the prepared baking sheet and bake for 25-30 minutes, tossing the tofu halfway, until the tofu is golden brown.

      • Interesting, thanks!! I’ve yet to try baking it and am super curious. I breaded and lightly fried it last night and was surprised at how firm it came out … I did forget it on the counter with two cast iron pans on top for a couple hours, which may have had something to do with it. Ha. 🙂


  1. You could make burritos with it, too. I don’t eat tofu much and I’m guessing you don’t eat eggs, but that almost looks like egg tacos. One of my favorite breakfasts is egg burritos with spinach and homemade salsa. I bet your recipe would go great in a breakfast burrito, too 😉


  2. I love tofu! It’s super easy to use and drying it out is the only part that can be partially frustrating. I do scrambled tofu with curry powder and loved it! Trying to master crispy tofu…not yet successful.

    I’m so excited to try this one. I’ve been looking for a tofu recipe to feed my dad, who is distinctly anti tofu (or any meal which doesn’t involve meat and carbs). I feel like tofu is so misunderstood – it is bland when it’s not cooked properly, but then, so is chicken! Tofu done nicely is the best 🙂 x
