Arugula Pizza

As my journey of forcing my boyfriend to eat healthy continues, it becomes harder and harder each week (lol). It is almost impossible to get him to eat a vegetable, since he is so set on fast food and meat. So yesterday, we made pizza with vegetables on it as an attempt to get him to eat healthier. We made three different kinds: vodka pizza, a plain pie and arugula pizza.

As you can guess, he didn’t touch the arugula pizza…

but I thought it was delicious!

Arugula Pizza


Preheat oven 450 F

Pizza dough (I always buy my dough at the store since I don’t have patience)
1 medium tomato
1/2 pound mozzarella
1 tbsp garlic
1/2 cup shaved parmesan cheese
1 cup arugula
balsamic vinegar

Let dough rise an hour or two before you start making the pizza. Once it rises, flour your surface and rolling pin. Cut the dough in half and spread it into a round pie shape with a rolling pin. Spread garlic on the dough. Place a layer of tomatoes, then parmesan cheese and mozzarella.  Bake for 10 minutes or until the cheese starts browning. Let cool and add arugula. Drizzle the balsamic vinegar on the pie! Enjoy!

    Yumm that pizza looks amazing!! You’re boyfriend is missing out lol. Mine is the same way though — he just started eating cucumbers but only if there is hummus to dip them in! So that is a huge milestone lol good luck with the vegetables :))
