Lavender Muffins

Lavender Muffins


1 egg
3/4 cup milk (I used rice milk)
1/2 cup vegetable oil
1 cup all purpose flour
1 cup oats
1/3 cup sugar
2 tsp dry lavender buds
3 tbsp baking powder
1 tsp salt

Heat oven to 400 F. Line muffin cups. Beat egg, stir in milk and oil. Pulse lavender buds and sugar in a food processor until the buds are fine. Add dry ingredients to wet ingredients all at once. Stir until flour is wet. Fill muffin cups 3/4 the way full and bake for about 20 minutes or until the muffins are golden brown.


Lavender Glaze

1 cup milk
2 tbsp dry lavender
2 cups confectioner sugar

Bowl milk in a small sauce pan. Add lavender and let steep for 10 minutes. Drain the milk. Add confectioner sugar and stir.
