Six years ago I was walking down the roads of Rome singing God Bless America with many other young American teens. It was our first trip abroad with friends and wow, was it an amazing journey. My best friend and I were too excited to see Italy, we couldn’t even handle it. We would venture off together, away from the group, and walk down different alleyways throughout Italy. We would find the best shops and sites down the unadventured path. We would eat pizza and gelato for every meal and drink wine throughout the day.
Since I was home this Fourth of July week, I decided to make Cauliflower tots. Check out the recipe below:
1 cauliflower head, cut into florets
1/2 cup parmesan cheese
1 large egg
1/2 cup diced onions
1/2 cup bread crumbs
preheat oven to 350 F. Grease large baking sheet. Bring a large pot of salted water to a boil and add the cauliflower florets. Cook until they are tender, 5-10 minutes. Drain the florets and add them to a food processor. pulse them until they are in small pieces. Stir in diced onions and parmesan cheese. spread into a 1/2 inch thick layer and freeze for 2 hours.
Take out of the freezer and cut into squares. Coat the squares in beaten egg, then coat them in breadcrumbs. Place the tots on a baking sheet and bake for 20 minutes. Flip the tots and bake for another 5-10 minutes.
