Avocados are one of the most nutrient-rich fruits (yes they are a fruit). They are packed with nutrients, such as fiber, folate, vitamin E, B vitamins and folic acid. They contain monounsaturated fat, which is the good fat. This fat has been shown to improve brain and heart health. Avocados also contain potassium! they have been shown to regulate the ratio of potassium and sodium in the body which is beneficial to your overall health.
There are so many dishes you can include avocados in such as guacamole or sandwiches. Here’s one of our favorite avocado side dishes below:
Cook time: 20 minutes
1 cup panko bread crumbs
1/4 tsp garlic powder
1/4 tsp salt
Heat oven to 400 F. Slice avocados into large slices. Mix garlic powder, salt, and bread crumbs into a bowl. Beat eggs. Coat avocado in egg then coat in bread crumb mixture. spread on greased baking sheet and bake for 15-20 minutes or until golden brown.
