Summer Pizza

At least once every two weeks my father and I make pizza together. There are so many different ways to make pizza with endless ingredients. My dad makes a meat pizza for my mother and him, while I make a vegetarian pizza for myself.

So, I decided to make a spinach and tomato pizza with an egg on top! served with a salad of course.



Servings: 6-8 servings
Bake: 30-35 minutes

1 ball of whole wheat pizza dough (luckily, my dad makes homemade dough for me!)
3/4 lb mozzarella (thinly sliced)
1 cup tomato sauce 
2 cups cherry tomatos (chopped)
1 cup fresh spinach
1 clove elephant garlic (sliced)
3 tbsp lemon and herb coconut oil
1 egg

Preheat oven to 400 F. stretch and form your dough into 16″-18″ circle and place on baking sheet. Fold 1/2 inch pieces of the edges in, to form the crust. 


First spread the tomato sauce around the pizza and place a layer of spinach. add tomatoes and elephant garlic evenly around the pizza. Evenly spread the mozzarella on the pizza. Drizzle some of the oil on the top of the pizza and put the rest in a small bowl. Brush the rest of the oil on the crust of the pizza. 

Cook for 25-30 minutes. Add the egg 5 minutes before the pizza is done (when the cheese is slightly golden). Take the pizza out when the egg is cooked!

  1. I love veggie pizza! And homemade always fills me up faster than take-out. Probably the “real” ingredients and lack of MSG haha!
