Happy Global Running day! This day is dedicated to celebrating the joys of running and to encourage and inspire others to go for a run! You can pledge to take part in this activity here. You can view different events near you and see how many people are pledging to stay active today and get moving! Unfortunately, I do not have time to go for a run outside, however, I will be running on the treadmill at work today.

In honor of running, I decided to make fiber filled, delicious muffins! They are moist, with the perfect amount of sweetness to start your day off right!

Coconut Almond Muffins

1 egg
½ cup  coconut milk
½ cup coconut oil/ vegetable oil
1 cup oats
1 cup flour
1/3  cup honey
3 tsp baking powder
1 tsp salt
½ cup shredded coconut
½ cup sliced almonds

Heat oven to 400 F.  Beat egg and stir in milk and oil. Stir in the remaining ingredients all at once, just until the flour is moistened. Put muffin liners in the muffin tins and fill them ¾ full. Bake until golden brown, about 20 minutes.

About 1 dozen muffins!
