Mother’s Day

As I wake up this morning, I can not help but think of all the wonderful things my mother has done for us over the years. From taking us on adventures to various islands to teaching us how to make a wish on dandelions. She is always there for us when we need her most, from crying over a boy to screaming in the car because we are stuck in traffic. She always finds a way to calm us down and bring us back to earth.

We celebrated Mother’s Day yesterday since I have a full day of work today. My grandmother and sister came over to have dinner and celebrate this day. We made a simple appetizer with broccolini and yellow tomatoes. Broccolini is a very healthy vegetable as it contains Vitamin C, A, K, iron and many other nutrients.

Broccolini
1 Pint yellow tomatoes
2 tbsp olive oil
Salt and pepper to taste
Garlic and herb goat cheese
bread of choice

Roast the vegetables with olive oil and salt/pepper. Cut bread and spread goat cheese on top and add the roasted vegetables.


Simple and delicious!
