It is finally summer for me, as I just finished my last final. Summer is my favorite time of year. The warm weather sets the mood of adventure and happiness. For me summer is for endless hours of hiking and drinks on the beach. To start off this season, we decided to make polenta fries.
Polenta dates back to the 1700s and was mainly a peasant staple, since it was plentiful and cheap. It is made from corn meal and is a low carbohydrate food.
It contains traces of many minerals and small amounts of various vitamins, such as B and A. Although it is not the most nutrient rich item, it is delicious.
Baked Polenta Fries
2 tbsp Olive Oil
Set oven to 400 degrees F. Cut the polenta in slices and spread across baking sheet. Drizzle oil across the polenta and sprinkle the garlic powder and chipolte seasoning on the fries (or seasoning of choice). Bake for 15 minutes on one side. Take the fries out and flip, then bake for 15 more minutes.
